One of my New Years Resolutions this 2018 was to eat a lot healthier. Last year my diet was ehhh so therefore reflected on how I felt. So far I have made a lot of changes in my diet, no more gluten (I do have an allergy to it but last year I was always cheating on it), meat, accompanied by eating lots of fruits and veggies.
But one of my biggest upsets was that I wasn’t going to be able to eat some of my favorite meals…..but wait… yes I could, all I had to do was make them healthier! That is why I am so happy to share with you today my favorite vegetarian recipes! These recipes are easy to cook and are sure to have your family wanting leftovers 🙂

Spinach Lasagna

INGREDIENTS
- 1 box lasagna noodles
- 1 large onion, chopped
- 3 cloves garlic, minced
- kosher salt
- Freshly ground black pepper
- 1 tsp. dried oregano
- 2 packages frozen spinach, thawed and drained of excess liquid
- 3 c. ricotta
- 1 large egg
- 1/2 c. Parmesan
- 1/2 tsp. ground cinnamon
- 3 c. mozzarella
- 2 c. marinara
- Freshly chopped parsley, for garnish
DIRECTIONS
- Preheat oven to 350º. Bring a large pot of salted boiling water to a boil and cook lasagna noodles until al dente. Drain.
- In a large skillet over medium heat, heat oil. Add onion and garlic and season with salt, pepper, and oregano. Stir in thawed and drained frozen spinach until completely combined.
- In a large bowl, stir together ricotta, egg, and Parmesan and season with cinnamon, salt, and pepper.
- In a large baking dish, layer 5 lasagna noodles so they’re slightly overlapping. Spoon over a thin layer of marinara and top with a layer of spinach mixture and ricotta mixture. Sprinkle with a layer of mozzarella. Repeat, ending with mozzarella.
- Cover with foil and bake 45 minutes, then remove foil and continue baking 15 minutes more.
- Let cool 10 minutes, then garnish with parsley, slice, and serve.
Black Bean Soup

- 2 tbsp. extra-virgin olive oil
- 1 medium red onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp. minced jalapeños
- 1 tbsp. tomato paste
- kosher salt
- Freshly ground black pepper
- 1 tsp. chili powder
- 1/2 tsp. cumin
- 3 (15-oz.) cans black beans, with liquid
- 1 qt. low-sodium chicken or vegetable stock
- 1 bay leaf
- sour cream, for garnish
- sliced avocado, for garnish
- chopped fresh cilantro, for garnish
DIRECTIONS
- In a large pot over medium heat, heat oil. Add onion and cook until soft and translucent, about 5 minutes. Add jalapeños and garlic and cook until fragrant, about 2 minutes. Add tomato paste, stir to coat vegetables, and cook about a minute more. Season with salt, pepper, chili powder, and cumin and stir to coat.
- Add black beans with their liquid and chicken broth. Stir soup, add bay leaf and bring to a boil. Immediately reduce to a simmer and let simmer until slightly reduced, about 15 minutes. Remove bay leaf.
- Using an immersion blender or food processor, blend the soup to desired consistency.
- Serve with a dollop of sour cream, sliced avocado, and cilantro.
Baked Corn Casserole

INGREDIENTS
- 1/2 c. finely ground cornmeal
- 1/2 c. butter, melted and cooled
- 1/4 c. sugar
- 2 large eggs
- 2/3 c. whole milk
- 1/4 c. cream
- 2 c. frozen corn, defrosted
- 2 8-oz. cans creamed corn
- kosher salt
- Freshly ground black pepper
- 1/2 tsp. paprika
- 2 tbsp. chives, for garnish
DIRECTIONS
- Preheat oven to 375°.
- In a large bowl, mix cornmeal and butter until smooth. Whisk in sugar, eggs, milk and cream until incorporated. Fold in corn and creamed corn and season with salt, pepper and paprika.
- Pour into your baking dish and bake uncovered for 1 hour, or until center is set and top is golden. Garnish with chives and serve.
I found these recipes on delish.com. For the past few weeks I have been using these food recipes in my kitchen and it is incredible, I love this site and I am so happy I found it. Not only are all the recipes vegetarian but they are also so easy to make 🙂

Do you think it would be okay to use sweetened condensed milk in place of the whole milk and cream in the Baked Corn 🌽 Casserole?
