The countdown to Halloween has officially started! Anyone else getting antsy? Excited for the spooky day? Is anyone reading this throwing a party? Well, if you answered yes to these questions (even if you didn’t you should still read my post!  just kidding 🙂 then today’s post is for you :). Last year at this time I posted about so many Halloween party ideas, tips & tricks and recipes, so at the end of this post you should definetly give those a read for even MORE information!

I am super happy all of my followers and readers have been enjoying my Fall and Halloween posts! I also want to apologize for my not posting on Friday. I have been sick and still am and was not up to posting. Thankfully I am feeling slightly better but unfortunately I am still a tad under the weather. Section1 : Spook-Tastic Halloween party recipes

The Great White Pumpkin Cheese Ball

Directions

  1. Stir together first 4 ingredients. Shape mixture into a ball to resemble a pumpkin. Smooth pumpkin’s entire surface with metal spatula or table knife. Make vertical grooves in ball, if desired, using fingertips. Press pretzel into top of cheese ball to resemble a pumpkin stem; place muscadine vine and leaf beside pretzel. Serve with crackers and assorted vegetables.
  2. To make ahead, wrap cheese ball in plastic wrap, without stem, vine, or leaf, and store in refrigerator up to two days. Attach stem, vine, and leaf before serving.

Caramel Peanut Popcorn Snack Mix

Directions

  1. Preheat oven to 325°. Spread popcorn in an even layer on a lightly greased (with cooking spray) heavy-duty aluminum foil-lined 13- x 18-inch pan. Stir together brown sugar and next 3 ingredients in a small saucepan over medium-low heat; bring to a simmer, and simmer, stirring constantly, 1 minute. Pour over popcorn, and stir gently to coat.
  2. Bake at 325° for 25 minutes, stirring every 5 minutes. Add peanuts during last 5 minutes. Remove from oven, and spread on lightly greased (with cooking spray) wax paper. Cool completely (about 20 minutes). Break apart large pieces, and stir in candy pieces. Store in an airtight container up to 1 week.
  3. Chef’s Notes – Cook kernels without oil in the microwave. Place 1/4 cup kernels in a 2 1/2-qt. microwave-safe bowl; completely cover bowl top with a microwave-safe plate. Cook at HIGH 3 to 4 minutes or until kernels have popped. Repeat with remaining kernels.

Pumpkin Pie Cutout Cookies

Directions 

  1. Prepare Cookies: Beat butter and granulated sugar at medium speed with an electric mixer 5 to 7 minutes or until light and fluffy. Add egg and vanilla; beat 1 minute.
  2. Sift together flour and next 2 ingredients. Add to butter mixture all at once, and beat at medium speed 1 minute or until combined. Flatten dough into a 1-inch-thick disk, and wrap in plastic wrap. Chill 2 hours.
  3. Preheat oven to 375°, with oven racks in 2 middle positions. Place dough on a lightly floured surface; roll to 1/4-inch thickness. (If dough gets too soft to handle, chill 5 to 10 minutes.)
  4. Cut dough with desired cutters, and place 1/2 inch apart on parchment paper-lined baking sheets. Reroll scraps as needed. Chill cut cookies 30 minutes.
  5. Bake cookies, 2 sheets at a time, at 375° for 9 minutes. Rotate pans front to back, and top rack to bottom rack. Bake 2 to 4 more minutes or until slightly golden around edges. Remove cookies to wire racks, and cool completely (about 15 minutes).
  6. Meanwhile, prepare Icing: Beat powdered sugar, egg whites, and 2 tsp. water at low speed 2 minutes. (If necessary, add up to 1 Tbsp. water, 1 tsp. at a time, to reach desired consistency.) Divide icing, and tint with food coloring, if desired. Cover icing with plastic wrap or a damp towel when not in use.
  7. Spread a thin layer of icing over each cookie. For a swirled effect, immediately dot cookie with another color of icing, and blend with a wooden pick. Let base layer of icing dry 10 minutes before piping details. Let finished cookies dry 15 minutes before serving.

  1. Cook first 6 ingredients in a heavy saucepan over low heat, stirring often, 15 minutes or until cream cheese is melted. Sprinkle with desired toppings, and serve warm with Bone Crackers.

PLEASE DO NOT USE A REAL PUMPKIN! Although it may look cool it will not end up good. I bought my FAKE PUMPKIN at Christmas Tree Shops and I just cut off the top part of it. You can either buy a top that is already off or just cut it like I did! But be careful!!
