The most delicious gluten & dairy free oatmeal craisin cookies EVER! {gf,df}

Cookies- delicious sweet treats that are universally loved. Everyone has their own interpretation when it comes to cookies; toffee chocolate chip, chili oatmeal raisin, banana nut coffee, the list can go on and on. But, there is something so delicious about a simple chocolate chip or oatmeal raisin cookie.

Since my last oatmeal raisin cookie recipe {gf, df, healthy} I have been receiving many comments and emails asking me to create another cookie recipe because my last one was so good, and today is finally the day! After weeks of adding and subtracting different ingredients I finally cracked the code to the best oatmeal raisin cookies. So, I am pleased to announce a new recipe that is going to make a wonderful and yummy addition to my blog.

My secret: There is actually not just one secret but two. The biggest tip I can give you when baking dairy free is in the butter you use. I’ve been avoiding dairy for a few years now and have been through my fair share of vegan butters. Some taste so amazing you don’t even realize it’s not butter and others crumble, literally. Out of all the vegan butters i’ve tasted none compare to earth balance vegan butter. They by far have the best tasting vegan spreads that I have ever found.

My second tip when baking, especially with oatmeal raisin cookies, is to not use raisins but instead craisins, the difference they make to this recipe is crazy. Now if you’re a traditionalist and prefer classic raisins then feel free to swap them out but if there’s even the slightest “hmmmm” in the back of your mind then try out the craisins because you will not be sorry.

Okay, enough chit chat on how AMAZING this recipe is, let’s get into how to make it so you can get started baking! ๐Ÿ™‚

  1. Pre-heat oven to 350 ยฐF
  2. Beat together butter and sugars then add eggs & vanilla and beat well
  3. Then add flour, baking soda, cinnamon and salt to sugar mixture
  4. Add in oats one cup at a time mixing in-between. Then add bag of craisins (or as much as you prefer)
  5. Butter your baking sheet with vegan butter and place a large spoonful of batter onto the pan to create 6 large cookies- you can make them smaller but I prefer them larger with a softer gooey middle
  6. Bake 10 to 12 minutes depending on the size of your cookies or until golden brown
  7. Cool for 2 min, transfer to a plate and enjoy ๐Ÿ™‚
