Delicious Cinnamon & Apple Loaf {paleo, gf, df, sugar free, heathy, soy-free}
One of peoples favorite activities to do with friends and family during the Fall is go apple picking. There is something so fun about spending the day in an apple orchard eating fresh donuts and drinking hot cider. It brings you back to when you were a little kid running around eating the apples, or going to the pumpkin patch and finding the Great Charlie Brown Pumpkin.
When it comes to Fall the three words which come to mind are- pumpkin, stuffing, and apples! What’s Fall without these? It’s certainly not the same, that’s for sure. And, since this beautiful time of year filled with the colors and crunching of leaving is coming to an end in a few weeks you better get Fall baking soon! And….. I have the perfect recipe for you to make.
This delicious cinnamon & Apple loaf is everything Fall in one bite. It’s the perfect amount of spice and healthy life to keep that smile on your face. No need to worry about adding a few pounds with Fall baking because this loaf is, paleo, gluten free, dairy-free, soy-free, sugar free and healthy. It’s a perfect way to embrace the Fall season all while keeping your figure.
Ingredients
- 1 cup + 3 tbsp tapioca flour
- 3/4 cup coconut flour
- 2 tsp baking powder
- 1 tbsp cinnamon
- 1/2 tsp salt
- 4 eggs
- 3 tbsp maple syrup (adds sweetness)
- 3/4 cup coconut milk or almond milk unsweetened
- 1/2 cup coconut oil
- 1 tsp vanilla extract
- 3 apples- peeled, cored, diced. My favorites are granny smith or honey crisp
Note: if batter is too runny add more tapioca flour and coconut flour in equal amounts
Directions
- Preheat oven to 350 Β°F
- Grease loaf pan with coconut oil, vegan butter or cooking spray
- Add tapioca flour, coconut flour, baking powder, cinnamon, & salt into bowl and mix.
- Then add eggs, coconut milk, coconut oil and vanilla extract, mix well.
- Fold in apples and combine
- Pour mixture into baking loaf and bake for 60- 65 minutes or until the center comes out clean using a toothpick.
- Cool for 5 minutes before slicing and enjoying π
