National pie day is tomorrow but since I don’t post on Wednesday’s I decided to share this delicious paleo pie a day earlier, so you can enjoy it on national pie day. ๐Ÿ™‚

Apple pie is my favorite type of pie so creating a paleo apple recipe that I could enjoy guilt-free and that would agree with my stomach was difficult. Certain times the paleo flour I was using didn’t work well and gave my pie a funny taste, other times it wasn’t sweet enough; what’s the point of eating dessert if it’s not going to be sweet. ๐Ÿ™‚

Finally, after testing out different recipes, adding, subtracting ingredients, and cooking at different temperatures, I landed on this amazing and delicious paleo apple pie. This recipe is perfect for every occasion and every person because even if you’re not paleo you’ll find yourself and others going back for seconds, thirds, and even fourths!

What makes this pie so great

The addition of coconut sugar to not just the filling but crust gives it a sweeter taste.

Adding the cubes of butter under the crust melts into the filling and absorbs into the crust giving this pie a buttery taste which makes the apples a yummy, soft, gooey texture. 

The crust is butter-based so it gives it a delicious flaky texture and a melt in your mouth taste.

Ingredients

Crust:

  • 2 cups almond flour
  • 2 cups tapioca starch
  • 1 tsp salt
  • 1 cup cold grass-fed butter
  • 2 eggs
  • 1 tbsp honey

Filling:

  • 7-8 medium green apples or your favorite kind, peeled, cored, sliced
  • 1 tbsp lemon juice
  • 1 cup of coconut sugar
  • 3 tbsp tapioca starch
  • 2 tsp vanilla extract
  • 1 1/2 tsp cinnamon
  • 1 tsp salt
  • 1 pinch of ground ginger (optional)
  • 1 pinch of nutmeg (optional)
  • 4 tbsp butter (for adding in cubes over top of the prepared filling)
  • 1 egg (for egg wash)
  • 1 tbsp coconut sugar (for crust topping)

Directionsย 

Crust:

  1. In a large bowl combine almond flour, tapioca flour, and cold butter, mix until butter is broken down- use a food processor to speed up the time
  2. Add egg and honey and mix until the dough comes together
  3. Shape dough into two round disks, wrap in saran wrap and place in the fridge for at least 4 hours or overnight.

Filling:

  1. Preheat oven to 375 F
  2. Remove dough from the fridge, roll out both pieces, and place one into the bottom of the pie dish. – the second will be for the top
  3. In a mixing bowl combine apples, lemon juice, coconut sugar, tapioca starch, vanilla, salt, cinnamon, nutmeg, and ginger. Mix.
  4. Scoop apple mixture into prepared pie crust then take 4 tbsp butter, cut into cubes and place spread out over filling.
  5. Top with second rolled pie crust, brush with egg wash and sprinkle with coconut sugar.
  6. Bake for 50 minutes – 1hr covering pie crust after 25 minutes of baking to avoid excessive browning.
  7. Allow pie to cool for at least 1 hr and ENJOY ๐Ÿ™‚

Notes

Cover pie with saran wrap, tin-foil or a pie cover and keep for up to 3 days in the fridge. To warm up place in a room temperature room for an hour or use the warm setting on the oven for 10+ minutes.ย
