The best gluten-free, dairy-free & vegan potato salad EVER!

Ingredients
  

  • 5 medium russet potatoes
  • 1 stalk celery chopped
  • 1 large carrot shredded Trader Joe's brand are the best
  • 1/2 cup yellow onion chopped
  • 1 3/4 cup Trader Joe's organic mayo naturally dairy free - or your favorite vegan/ dairy free mayo
  • 1/2 cup yellow mustard my favorite is from Trader Joe's
  • 4 tsp sugar
  • 1 tsp onion powder
  • 1 tsp chili powder

Instructions
 

  • Peel then boil the potatoes until soft
  • Mash half of them and cut the other half into slices.
  • Combine all the rest of the ingredients in a bowl, and stir until everything is well incorporated
  • Add the potatoes and stir to combine everything
  • Enjoy
